STICKY DATE PUDDING
(6 – 8 people)
PUDDING
Bring the following ingredients to the boil
1 cup water
1 cup chopped dates
1ts bi carb soda
Allow to cool.
Mix the following dry Ingredients
2 cups flour
1ts baking powder
1ts cinnamon
Cream/blend together
60gms butter
120gms brown sugar
2 eggs
1ts vanilla
Combine all wet ingredients and add to the dry ingredients.
Mix well.
Pour into a greased square cake tin and bake at 180 degrees
for 35 minutes
Sauce
150gms unsalted butter
1 cup brown sugar
200mls cream
Bring to the boil and simmer for 2 minutes
Pour over pudding when served.
