NUT LOAF
(6 – 8 people)
Ingredients
1 cup cooked rice
1 onion, chopped
1 carrot, chopped
2 stalks celery
Garlic, fresh herbs –eg marjoram, basil
1 cup mixed nuts, chopped or blended
100gms cheese
2 eggs or chickpea flour to bind
Method
Sauté vegetables till softened.
Mix all ingredients together
Place in a greased loaf pan
Bake in moderate oven for 30 minutes.
Leave a few minutes before turning out.
