MINESTRONE SOUP
Ingredients
2 TS olive oil
2 cups of chopped vegetables. Can include
Onion, carrot, turnip, leek, celery, cabbage, parsnip
2 cloves garlic
1 dessertspoon tomato paste
1 litre of stock (can use Massel stock powder
½ cup of peas
1 small potato, diced
1 small tomato, diced
Rice sticks (gluten free) or spaghetti
Parsley finely chopped
Parmesan
Salt and pepper to taste
Method
Heat the oil in a large saucepan.
Sauté the 2 cups of chopped vegetables and garlic
gently.
Add the stock and tomato paste.
Bring to boil and simmer for about 15 minutes.
Add peas potato tomato and noodles.
Continue simmering until all ingredients are cooked.
Add finely chopped parley.
Taste and adjust seasoning
Use parmesan cheese as accompaniment.
Variations:
Add soaked and cooked beans in simmering stage
