LASAGNE
(6 – 8 people)
Tomato Sauce
Sauté the following ingredients in olive oil
2 Onions diced
2 Cloves garlic crushed
1 Capsicum
Basil, marjoram (2 ts dried, more fresh),
3 bay leaves
Salt & Pepper
Add:
2 TS Red wine
1 Tin of tomatoes or 2-3 fresh tomatoes
2 TS tomato paste
1 TS sugar
Simmer for 30 minutes
Filling
500gms Ricotta or cottage cheese
2 Eggs
Pinch nutmeg
100mls Milk
Can add: ¼ bunch of spinach
and/or 100gms mushrooms
250gms grated mozzarella cheese
White Sauce
75gms butter
75gms flour
600mls milk
Salt, cayenne pepper, nutmeg, mustard
To make sauce: Melt butter, add flour and mix over low heat.
Gradually add the milk until thickened. Season.
Layering
Layer ingredients as follows: tomato sauce,
lasagne noodles, filling, noodles
Repeat
Finish with white sauce and sprinkle with Parmesan cheese.
Bake in moderate oven for approximately 30 minutes.
