REAL HUNZA PIE
(6 – 8 people)
Crust
1 ½ cups (500gms) wholemeal spelt flour
1 ½ cups (500gms) white flour
250gms butter
1 cup yoghurt (or traditionally two eggs and 100mls water)
good pinch of salt
Mix above ingredients together and cool in fridge for 30
minutes.
Filling
1 ¼ kg potatoes, peel, diced and boiled
2 onions, diced
Bunch spinach, washed
Sauté onions till transparent, add spinach and cook
briefly till limp.
Combine all filling ingredients.
Cheese Sauce
100gms butter
100gms flour
100gms cheese
1 litre milk
Seasoning: salt, cayenne pepper, nutmeg, mustard
To make sauce: Melt butter, add flour and mix over low heat.
Gradually add the milk until thickened. Season. Add cheese
until melted.
Combine filling and sauce.
Roll pastry and use 2/3 to line pie or casserole dish. Place
filling in piecrust and cover with remaining pastry.
Bake in a moderate oven for 30 minutes or until the crust
is golden brown.
