HUMUS
Ingredients
1 cup chickpeas soaked overnight
3 cups of water & 1/2 ts salt
2 medium cloves minced garlic
dash tamari
½ cup tahini
juice 1 lemon
1/3 cup finely minced parsley
1/3 cup minced scallions
black pepper to taste and dash of cayenne
Method
Boil chickpeas until soft in salted water. Cool and drain.
(Save some stock in case needed.)
Blend chickpeas with remaining ingredients. Add additional
stock if too dry.
Taste and adjust seasoning if necessary.
