BABA GANOUJ
Ingredients
1 eggplant
2 cups tahini
3 cloves garlic, crushed
½ cup finely chopped parsley
½ ts salt
¼ cup minced spring onion
Fresh ground black pepper
1 TS olive oil
Juice 1 lemon
Method
Cook the eggplant. You can bake it in the oven till soft
and scoop out the insides or dice and steam until soft.
Combine all ingredients except olive oil and mix well.
Chill and drizzle olive oil over mixture.
Serve with vegetable sticks or turkish bread.
