POACHED FIGS
INGREDIENTS
4 - 5 small fresh figs per person.
1 – 2 cups wine
2 TS honey
1 Cinnamon stick
Vanilla pod or ½ ts vanilla essence
Additional ground cinnamon
METHOD
Pour hot water over the figs to wash them. Can cut tops
of if desired. Drain.
Place figs upright in a wide bottomed saucepan in one layer
Add honey cinnamon and vanilla
Pour wine over figs – figs will not be covered
Simmer gently for about 5 minutes. Do not overcook as figs
need to remain firm.
Leave to marinate in wine mixture at least until cool, then
remove figs.
Bring the liquid to the boil and reduce to a syrup. This
should only take a couple of minutes and needs to be caught
before it becomes like toffee. Cool.
SERVING
Serve figs cold with the syrup drizzled over them and topped
with cream.
For contrasting taste add blue vein cheese and biscotti
on the side.
